Malic acid reported is one of the building blocks of the chemical industry and also used in the food and beverage industries, it is added to enhance the sour flavor in products such as jellies, jams, juices and soft drinks.
Novozymes executive vice president Thomas Videbæk termed the development to be the company’s first biochemical building block and a major milestone.

The company will now look to licensing the technology to its partners who are interested in producing and commercializing the product and its derivatives made from renewable raw materials instead of oil.
